When life gives you eggs....it's time for chorizo mayonnaise

Our Mrs Chickens have been very productive and when life gives you eggs then why not make chorizo mayonnaise? 😋

Finely chop 100g chorizo and place in a cold pan with 200ml neutral oil e.g rapeseed. Slowly increase heat until the gorgeous chorizo fat begins to render into the oil. Add 1tbsp smoked paprika. Turn heat down to low and let it do its thing for 25minutes. Strain the oil into a jug and set aside until it cools to room temperature Spread the chorizo onto a baking tray and place in a preheated 150C oven for 10 minutes to dry it out and crisp it up. This will be your garnish (if you don't eat it all when it comes out of the oven! I almost did 😂) Place 2 egg yolks, 1tbsp Dijon mustard, 1tbsp sherry or white wine vinegar and a good pinch of salt into a large bowl and whisk to combine. While whisking gradually poor in that reserved oil that you cooked the chorizo in. Keep going until you get mayonnaise consistency. Check flavour..I added a drop of honey but see what you think. Cook up some chips and get stuck in. Yum yum yum
