Beautiful GF and DF banana bread. (For DF omit choc chips or use DF chocolate)
Preheat oven to 175C
Line a loaf tin
In a large mixing bowl whisk together ...
2-3 ripe or over ripe bananas (mashed)
1/3 cup vegetable oil
1 tsp vanilla extract
2 large eggs
3/4 cup granulated sugar
In a separate bowl combine
Pinch salt
1 1/2 cups gluten-free all purpose flour
1 tsp baking soda
1/4 tsp xanthan gum
1 tsp cinnamon (optional)
Fold these dry ingredients into the wet ingredients
Pour half mixture into lined loaf tin. Sprinkle in about 25g chocolate chips (optional). Pour in rest of mixture. Sprinkle another 25g choc chips over the top (optional). Bake for around 50 mins, or until risen and brown. You should be able to insert a cocktail stick into the centre without it coming out covered in goo! A bit of melted chocolate is ok 👍Leave to cool in tin on a wire wrack and then slice and enjoy.
