Spicy Crunchy Chicken Salad

1 cup shredded chicken
1/2 red onion, chopped
handfull of cashews, chopped
1/2 small cabbage thinly sliced
1 carrot, grated
MIX TOGETHER
1/4 cup natural yoghurt
1/8 cup smooth peanut butter
1/8 cup tamari
1tbsp rice vinegar
1/2tbsp maple syrup
1tsp sesame oil
pinch of garlic powder
pinch of ginger powder
1/2tsp chilli oil
WHISK TOGETHER
Then just mix the dressing with the other ingredients and you've got a stonking recipe, particularly if you are bored of lunch like I get!
